Shown here (sage, lovage, parsley, chervil, chives, thyme, marjoram, rosemary and estragon) However, you can use what you prefer in the kitchen. A simple Tuscan blend consists of 50/50 rosemary and sage.
Chop the herbs very finely and lay out loosely on a cookie sheet. cover herbs liberally with kosher salt and repeat.
Place herbs in the oven on the lowest temp possible, some prefer to just use the oven light for warmth and heat. Leave overnight.
In the morning check on the herbs, be sure that they are completely dry. When they are thoroughly dried put herbs and salt in a blender/food processor and spin until the mixture is to your liking.
Store in clean dry jars.
